Big Green Egg Holiday Baked Brie Charcuterie Board

Ingredients

  • 1-8 oz wheel of Brie
  • 1 sheet of frozen puff pastry, thawed
  • Nuts of your choice, we used walnuts, almonds, pumpkin seeds and pistachios
  • Sliced apple
  • Pomegranate arils
  • Sundried tomatoes, dried pineapple and any other dried fruit of your choice
  • Fresh herbs of your choice, we used thyme, rosemary
  • Fresh fruit of your choice
  • Rustic crackers

Directions

  1. Step 1

    Set the oven or the Big Green Egg for indirect cooking with a convEGGtor at 350°F

    Step 2

    Use a sharp knife to score the top of the brie. Roll out the puff pastry. Dust a work surface with a small amount of flour. Unwrap 1 sheet puff pastry and place it on the flour. Coat a rolling pin with a little flour and roll out the puff pastry into a rough 11-inch square. Wrap the pastry dough around the brie

    Step 3

    Line a cast iron skillet with with parchment paper and place wheel of Brie in the middle of the skillet. Bake for 15-20 minutes. The cheese should be soft, but not completely melted out of shape.

    Step 4

    Build the board with all other ingredients and garnish with fresh herbs and pomegranate arils.
