Summer Necessity: Grilled Street Corn!

Grilled summer corn is a thing of beauty - it's one of those dishes that we wait for all year long - but slather it with creamy sauce, chili, cheese, and cilantro and you've got yourself an addictive summer treat that will be the new family barbecue staple.
INGREDIENTS
4 ears corn, shucked
3 tbsp mayonnaise
3 tbsp crema
1 tsp fresh lime juice
1 clove garlic, grated
1/4 tsp paprika
1/4 tsp chili powder
1/3 cup cotija cheese, very finely crumbled
3 tbsp fresh cilantro, roughly chopped
4 lime wedges, for serving
METHOD
Preheat an outdoor grill or stovetop grill pan and grill corn evenly, rotating occasionally, until cooked through, about 8 to 10 minutes. Make sure corn is nicely browned, with some charred spots for added flavor.
While corn is grilling, mix mayonnaise, crema, lime juice, garlic, paprika, and chili powder together in a medium bowl. Brush this mixture onto the corn once it’s removed from the grill and place the ears on a serving platter. Sprinkle corn with cheese, top with cilantro, and serve with lime wedges on the side.
