I don't know about you, but I've had my fair share of buckwheat pancakes that resemble bricks or rocks or some other building material that isn't entirely mouthwatering. While testing this recipe, I wanted to make sure these pancakes were tender, truly fluffy, and worthy of a Sunday morning. I am happy to say that these are fluffy, nutty, and richly flavorful. They also just happen to be gluten-free

Remember: the secret to a great pancake (other than lots of warm maple syrup and butter) is not to overmix the batter. It's completely fine to leave a few small lumps in there.

This recipe is SO GOOD. I’ve been trying to learn more gluten-free recipes and I love that you don’t use eggs either = less fat! But these are still so flavorful and fluffy. Thank you for sharing. YUM!
