Black Sesame Brown Butter Rice Krispy Treats | Katianna Hong

Ingredients

• 60 g (½ cup) black sesame seeds

• 15 g (1 Tbsp) neutral oil

• 15 g (1 Tbsp) honey

• 2 g (pinch) kosher salt

• 115 g (8 Tbsp / ½ cup) unsalted butter

• 1 bag marshmallows

• 120 g (5½ cups) Rice Krispies cereal

• 15 g (1 Tbsp) black sesame seeds, to finish

• Optional: flaky sea salt

• Optional: 2 tsp yellow miso (add to browned butter)

Directions

  1. Toast sesame seeds until fragrant; process into coarse powder.
  2. Add honey, oil, and salt; process into a paste.
  3. Brown butter over medium heat until deep golden.
  4. Stir in sesame paste, then melt marshmallows in mixture.
  5. Fold in Rice Krispies quickly before mixture cools.
  6. Press into a greased or lined pan; sprinkle sesame seeds and sea salt.
  7. Cool fully before cutting.
