Ingredients
• 60 g (½ cup) black sesame seeds
• 15 g (1 Tbsp) neutral oil
• 15 g (1 Tbsp) honey
• 2 g (pinch) kosher salt
• 115 g (8 Tbsp / ½ cup) unsalted butter
• 1 bag marshmallows
• 120 g (5½ cups) Rice Krispies cereal
• 15 g (1 Tbsp) black sesame seeds, to finish
• Optional: flaky sea salt
• Optional: 2 tsp yellow miso (add to browned butter)
Directions
- Toast sesame seeds until fragrant; process into coarse powder.
- Add honey, oil, and salt; process into a paste.
- Brown butter over medium heat until deep golden.
- Stir in sesame paste, then melt marshmallows in mixture.
- Fold in Rice Krispies quickly before mixture cools.
- Press into a greased or lined pan; sprinkle sesame seeds and sea salt.
- Cool fully before cutting.
